- 3/4 cup gluten-free rolled oats
- 1/4 cup applesauce
- 1/4 cup creamy natural peanut butter
- 1/3 cup pure maple syrup
- 2 eggs, room temperature
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon

To keep this recipe gluten-free, we are using organic gluten free rolled oats instead of all-purpose flour. Rolled oats, also known as old-fashioned oats, are the secret weapon in these muffins They act as a binder for a satisfying texture, add a nutty depth of flavor, and provide a fiber boost to keep you feeling full. Plus, using rolled oats makes these muffins a wholesome whole-grain treat. If you have oat flour on hand, you can easily swap it in. Just replace the ¾ cup of rolled oats with ½ cup of oat flour.
Applesauce adds natural sweetness and moisture, keeping the muffins fluffy and delicious without tons of sugar. Applesauce also helps bind the ingredients together for a cohesive texture and can even contribute to a slightly lower fat content compared to using oil or butter. You can use storebought or homemade with my easy applesauce recipe.
Natural creamy peanut butter adds a light nutty peanut butter flavor. You are free to swap in almond butter, or cashew butter. Make sure to opt for a nut butter without added sugars or oils.
How to Make Peanut Butter Chocolate Chip Chickpea Muffins
First, preheat the oven to 350 degrees F.
Then drain and rinse the chickpeas using a fine mesh strainer.
Next, place chickpeas in a high-powered blender or food processor.
Then add the maple syrup.
Add the rolled oats to the food processor.
Then add the eggs and applesauce.
Add the peanut butter and the rest of the ingredients. (Not the chocolate chips)
Blend until the muffin batter is smooth and fully incorporated.
Next, transfer the batter to a large bowl and gently fold in the dark chocolate chips.
How Long to Bake Flourless Peanut Butter Muffins with Chickpeas
First, line a 12-cup muffin tin with parchment paper muffin liners.
Then spoon or scoop equal portions of batter into each of the muffin cups. A 1/4 cup measuring cup is perfect for ensuring equal amounts of batter for each muffin.
Next, sprinkle a few chocolate chips on the tops of each muffin.
Place in the oven and bake for 16-18 minutes until slightly golden brown and the muffins pass the toothpick test.
Remove the healthy chickpea muffins and place them on a wire rack to cool.
