How to Make Healthy Cinnamon Apple Muffins

First, preheat the oven to 350 degrees F.

Then in a large bowl, combine the almond flour with the other dry ingredients. Add the baking powder, baking soda, salt, cinnamon, and nutmeg.

Whisk the flour mixture to combine and set aside.

Next, in a separate bowl combine the eggs with the maple syrup.

Then add the rest of the wet ingredients. Add the vanilla extract and the coconut oil. Whisk to combine.

Pour the wet ingredients into the dry.

Stir to combine and then gently fold the shredded apple and the raisins into the muffin batter.

Next, line a muffin tin with muffin liners. Parchment paper liners are my favorite because they prevent sticking and ensure a clean release every time.

How Long to Bake Healthy Apple Muffins with Raisins

Scoop equal portions of the batter into the muffin cups and bake for 20-25 minutes until golden brown. Make sure the muffins pass the toothpick test before removing them from the oven.

To check for doneness, insert a toothpick into the center of a muffin. If it comes out clean, your muffins are baked through. If there are wet batter crumbs on the toothpick, bake for a few more minutes and check again.
