What You Need to Make the Best Healthy Banana Muffins
To make this healthy banana muffin recipe you will need a handful of nutritious ingredients. If you often bake with dairy-free, and gluten-free ingredients then you may already have most of these items in your pantry. Otherwise, you can easily get them at the grocery store, and/or online.
- 2 cups almond flour
- 1/3 cup coconut flour
- 1 1/2 tsp cardamom
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla bean powder
- 1/4 coconut oil, melted
- 2 bananas, mashed
- 3 eggs, at room temperature
- 1/4 cup pure maple syrup
- optional- mini chocolate chips, chopped walnuts
If you are new to gluten-free baking, Bob’s Red Mill has great flours and products. This is the almond flour, and coconut flour that you can use.
You can get vanilla bean powder online, or replace it with vanilla extract. 1 tsp of vanilla bean powder would be replaced with 2 tsp of vanilla extract.
If you are super sensitive to coconut oil and do not like it (my husband), then you can swap the coconut oil out for avocado oil.
You will also need a muffin tin, muffin liners, and a stand mixer or hand mixer to make these easy banana muffins.
How to Prepare the Muffin Batter for Gluten Free Banana Muffins
First, preheat the oven to 325 degrees F.
Then add the almond flour to a large bowl.
Next, add the coconut flour, followed by the rest of the dry ingredients.
In a separete medium bowl, mash bananas with a fork or potato masher. Overripe bananas will offer the most sweetness to your muffins.
Then add the eggs, maple syrup, oil, and the rest of the wet ingredients.
Next, add the banana mixture to the dry ingredients. Use a stand mixer or hand mixer to mix the batter until smooth.
Optional add ins – you can add chocolate chips, or chopped walnuts to this gluten free banana muffin recipe. You would fold them after had mixing the muffin batter. These are the chocolate chips that I use.
How to Make Easy Healthy Banana Muffins
First, line a muffin pan with parchment paper liners.
Then scoop the muffin batter into each of the muffin cups. Use a 1/4 cup measuring cup to ensure the healthy gluten free banana muffins are all the same size and bake evenly.
Place the muffins in the preheated oven and bake for 18-20 minutes. In the last 2-3 minutes of baking, you can sprinkle the tops of the muffins with a little bit of coconut sugar if you’d like.
Remove the muffins from the oven with they are golden brown and pass the toothpick test. Set on a wire rack to cool.
Poke a clean toothpick into the center of a muffin. If the toothpick comes out wet, then it needs a bit more time. If the toothpick comes our dry then the muffins are done. - If adding optional add ins of chocoalte chips, or chopped nuts, fold them in now.
- Fill a muffin tin with paper lines.
- Scoop muffin batter into muffin cups.
- Bake for 18-20 minutes until golden brown and muffins bass the toothpick test.
