What You Need to Make An Air Fryer Jacket Potato

To make these tasty taters you only need a few simple ingredients.

  • 2 medium-large potatoes
  • 1 Tbsp avocado oil

You will also need an air fryer. I’m using the Ninja Foodi all-in-one air fryer, and pressure cooker countertop appliance to make these jacket potatoes. You can achieve similar results by following these steps in any comparable air fryer.

When it comes to making the perfect air fryer baked potatoes you really can use just about any type of potato. For the sake of this step-by-step guide, I am using medium-sized russet potatoes, but you can use sweet potatoes or even small potatoes like red potatoes. Keep in mind the size of your potatoes may alter the cooking time. Smaller potatoes may cook in less time than large or medium potatoes for example. 

For the seasoning, you can swap out the garlic powder for your favorite simple spice blend like paprika or dried parsley if you’d like. That part is a personal preference. 

Best Way to Cook Jacket Potatoes in an Air Fryer

First, preheat the air fryer to 400 degrees F. Select the ‘air crisp’ function, set the temperature to 400, and press start.

While the air fryer heats up, prepare the potatoes. First, wash and dry the potatoes. Dry them with a paper towel.

Next, poke holes into the potatoes with a fork, or the tip of a sharp knife. Poking holes in the spuds serve two purposes: 

  • Prevents exploding: As the potato heats up, steam builds up inside. Poking holes allows this steam to escape, reducing the risk of the potato exploding in your air fryer.
  • Ensures even cooking: The holes can help distribute heat more evenly throughout the potato, resulting in a more consistently cooked interior.

Then drizzle a little oil onto the potatoes. Coating potatoes in oil before air frying is essential for achieving that crispy, golden-brown exterior. Here’s why:

  • Conducts heat: Oil helps to transfer heat evenly to the potato’s surface, promoting browning and crispy skin.
  • Flavor enhancer: Oil can also help to enhance the flavor of the potatoes by carrying seasonings and spices.
  • Moisture barrier: A light coating of oil can help prevent the potatoes from drying out during the air frying process.

By creating a barrier between the hot air and the potato, the oil helps to lock in moisture and develop a delicious, crunchy crust.

Next, add the seasoning of choice. I am using a little sea salt and garlic powder. Rub the spices all over the potatoes.

Place the prepared potatoes into the preheated air fryer. You can use the air fryer basket or the wire rack. I’m using the wire rack to maximize hot air circulation for evenly cooked and crispy potatoes.

How Long to Cook Jacket Potatoes in an Air Fryer

Again, make sure to select the Air Crisp air fryer setting. Set the temperature to 400 degrees F, and set the cooking time for a total of 40-50 minutes. Time will vary slightly based on the size of the potato. Larger potatoes will need closer to 50 minutes, while smaller ones won’t require as much time. Press start.

At the halfway point, carefully flip the potatoes over using a pair of silicone tongs.

Your jacket potatoes are ready when:

  • A fork slides in easily: The potato should be tender all the way through.
  • The skin is crispy: The exterior should be golden brown and slightly crunchy.
  • The internal temperature reaches 208-211°F (98-99°C)

Transfer the perfect baked potato to a plate. It’s best to let the jacket potatoes rest for a few minutes before cutting them open. Letting them rest also makes them easier to handle without burning your fingers.
