How to Make a Healthy Farmers Casserole Recipe
First, preheat the oven to 375 degrees F.
While classic farmers casseroles often feature hash browns, we’re taking a healthier turn by swapping them for delicious sweet potatoes.
Peel, and cut the sweet potatoes into 1-2″cubes. Place them on a parchment paper lined baking sheet, and roast in the oven for 20 minutes.
While the sweet potatoes bake in the oven dice the bell peppers, onions, and herbs, slice the cherry tomatoes, and chop the baby spinach.
Then cook the breakfast sausage in a large skillet over medium heat.
When the breakfast sausages are brown and you don’t see any pink, remove them from the pan with a slotted spoon leaving the pot in the skillet.
Add the diced onions to the hot skillet and cook in the pork fat, stirring continuously until softened.
Next, add the peppers to the skillet and cook for 2-3 minutes.
Add the sliced tomatoes.
Then add the fresh herbs.
Return the cooked breakfast sausage to the skillet.
Stir to combine all ingredients, remove from the heat, and set aside.
Next, in a large mixing bowl combine eggs and whisk them until fully scrambled.
Then add the shredded cheese to the eggs.
How to Layer a Breakfast Egg Casserole
Remove the sweet potatoes from the oven and grab a square baking dish. Layer the sweet potatoes at the bottom of the dish.
Next, transfer the ground sausage and vegetables to the casserole dish.

Instructions
- Preheat the oven to 375 degrees.
- Peel and cube sweet potatoes. Bake on a parchment paper-lined baking sheet for 20 minutes.
- Cook the breakfast sausage in a large skillet over medium heat.
- Remove the cooked sausage with a slotted spoon, leaving the pork fat in the skillet.
- Then saute the onions in the pork fat over medium heat until soft, then add the bell peppers and sliced tomatoes.
- Stir to combine, and cook for 2-3 minutes.
- Then add the fresh herbs and baby spinach until wilted.
- Return the ground pork to the skillet, stir to combine, remove from heat, and set aside.
- In a separate bowl whisk the eggs.
- Add the shredded cheese to the eggs.
- Remove the sweet potatoes from the oven and line the bottom of a casserole dish with the sweet potatoes.
- Next, add the vegetable and sausage mixture into the baking dish.
- Pour egg mixture over top. of the casserole ingredients.
- Cover with foil and bake for 45-55 minutes.
- Remove the foil for the last 15 minutes.
