What Are Leeks?
Leeks are healthy vegetables with dark green leaves and a white base root end. They are part of the allium family, along with garlic, scallions, chives, and onions.
A leek looks like a giant green onion but has a milder sweet oniony flavor. The flavor is more delicate than onions, which makes them perfect for soups, stews, and other delicious recipes.
When recipes call for leeks, they typically mean the white and light green portion. The dark green part of the leeks is tough, and if often removed and discarded. Though they can be saved and used to season soups, stews, and broths.
How to Clean Leeks
Cleaning your leeks is an important step in any leeks recipe. The easiest way to clean them is to rinse them in cool water first, to wash away any visible dirt. Then trim the ends with a sharp knife and cut them up. Next, place the chopped leeks in a bowl of cold water. Remove the chopped leeks from the water with a slotted spoon. This is the best method when using your fresh leeks in a soup or stew.
If you are not chopping the leeks for soups, then the next best way to clean them is to cut off the majority of the dark green tops of the leeks. Gently split the leek a little bit, and rinse the leeks in water with the water running down into the open areas of the leek. Also, trim off the root end, and discard.
