So I often make healthy snacks, like muffins and smoothies to satisfy the sweet tooth while enjoying something rather healthy. This is also a great option for kids, because its never too early to teach kids good eating habits.

What You Need to Make Healthy Apple Oatmeal Muffins

For these apple cinnamon oatmeal muffins you will need a few simple ingredients. If you are an avid baker, you may already have many of these things in your pantry. There are links at the bottom of the recipe where you can purchase all of the ingredients and items used to make these apple muffins.

  • 2 cups gluten free rolled oats
  • 1 tsp baking powder
  • 1 large apple, peeled, cored, and diced
  • 1 1/2 tsp cinnamon, divided
  • 2 rip bananas, mashed
  • 2 eggs, room temperature
  • 1/4 cup maple syrup
  • 1/2 tsp ground nutmeg

You will also need a muffin pan, and muffin liners.

How to Make Healthy Apple Muffins with Oats

First, preheat the oven to 350 degrees F.

Then place the diced apples in a medium sized bowl and toss with 1/2 tsp of the cinnamon to coat, and set aside. Make sure the apple pieces are cut into small bite sized pieces.

You can use any of your favorite apples for these muffins. You can use granny smiths, gala, red delicious, etc. I am using gala apples for this apple oatmeal muffin recipe.

Next, in a separate large bowl mash the bananas.

Then add the other wet ingredients to the mashed bananas. Add the eggs, maple syrup, and almond milk.

Also add the rest of the cinnamon and the nutmeg to the wet mixture. Stir to combine.

Add the oats and the baking powder to the mashed banana mixture.

Mix thoroughly, and let the oats sit for at least 5 minutes to allow them to soak up some of the liquid. Do not skip this step.

After 5 minutes, gently fold in the diced apples, and mix thoroughly.

How to Bake Apple Oat Muffins

Line a muffin pan with parchment paper liners.

Then fill each of the muffin cups with equal portions of muffin batter.

Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove and place on a wire rack to cool.

Cooling Healthy Apple Oatmeal Muffins

First, let the muffins cool in the pan for 5-10 minutes.

Then gently take them from the pan and let them cool completely on the wire rack. As the muffins cool the parchment paper liners will easily fall away from the tasty muffins, with no sticking.

These delicious cinnamon apple oatmeal muffins are best enjoyed warm, right out of the oven. If you meal prep then this is a great recipe for a quick breakfast on busy mornings, or an easy afternoon snack.

If not devoured right away, leftover muffins can be stored in an airtight container in the refrigerator for 3-5 days.
